Ingredients:
2 lb. Ground Sirloin
2 cups Canyon Tortilla Soup
1 can Black beans or corn, rinsed and drained
4 large Eggs
2 cups crushed Tortilla Chips
1 cup shredded Monterey Jack or Cheddar cheese
Preheat oven to 375F. Combine all ingredients (except cheese) & 1 cup Canyon Tortilla Soup and blend well. Form mixture into 6 to 8 individual oval meatloaves. Bake for 30-40 minutes or until internal temperature reaches 160F. Remove & top with remaining Tortilla Soup and cheese. Bake 5 to 10 minutes longer to melt cheese. Let rest for 10 minutes and enjoy. |
